Enchiladas are a staple of Mexican cuisine, consisting of a tortilla folded in half (not rolled) filled with salsa or mole, cheese, crema and sliced onions.
Learn to make authentic enchiladas from the newest member to our chef team, Ximena Castro. She studied culinary at Cordon Bleu in Mexico City and worked in the city’s upscale restaurant scene before coming to Colorado with her family.
